The fundraising team is excited to announce that after only two days of promoting the endowment in memory of Cathy Davius, we're already 25% of the way to our goal of $25,000!  We are beyond grateful for our existing 35 donors and hope to reach 50% by the end of the month.

 

As you're probably aware, Cathy had just started her dream job as a Registered Dietitian at Grand Prairie ISD, a school district in a suburb of Dallas, Texas less that two months before she was tragically killed.  The fundraising team reached out to the Director of Child Nutrition, Domenik Peterson, Cathy's previous employer to share a few stories from Cathy's last few days of life.  The response was overwhelming as coworkers that had known Cathy for less than two months were distraught at the news of her passing.  She was in their lives for such a short period of time but her personality was so big and her presence so positive that time did not matter and her impact on the team was as if she had worked there her entire life.

 

"Cathy was a unique light in the world. She had a presence that was electric and could ignite a spark of passion. For a quick few months we got to feed off of that enthusiasm. Nutrition and wellness was not just a job or profession for her, it was a way of life and a calling. She strived to better the world that she encountered with her knowledge and capacity to relate to others. "I had only known Cathy for a couple of months, but I was lucky enough to call her my friend. Her smile, her positivity, her enthusiasm, her adorable quirks are a few of the many things I loved about Cathy. We bonded over being from New York, completing our dietetic internship in New York, and somehow ending up interviewing for the same dietitian position on the same day in Grand Prairie, Texas. Cathy’s radiant energy was infectious and has changed the way I live my life each day, she will forever occupy a space in my heart, and I miss her so much." - Livija Wells, SFE

 

"I didn’t know Cathy very long, but we spent Monday, June 3rd together cooking for kids at a local school district. Cathy was very excited to help in the kitchen and she talked a lot about her husband, the food she had recently prepared and the restaurants she planned on visiting. We talked about my training, my time with SFE and the type of foods I cook for my family. What happened was a bit funny. I asked her to open these large #10 cans of beans that were being served at a park offsite from the school. She started to open the cans for me and pour the beans into a large skillet for the stove. Soon after that, she started to clean the cans, dry the cans and peel off the paper. She assumed the aluminum cans needed to be perfectly clean and dry for the recycling bin. I knew right away she was preparing them for the recycling bin, but I didn’t tell her the district did not recycle. "Cathy brought so much joy to the office. It was automatically a happier and better day with her around. The love she had for this job showed. She was always willing to pitch in and help however she could. She is very missed and still loved dearly." - Tara Clear, SFE

 

"Cathy had a pure kind soul, she was simply radiant. Cathy sat right next to me and would always ask “How are you doing Lawrence”, I used to joke with her that she was my “personal doctor.”   She inquired about my eating and sleeping habits, I could feel that she really cared about my wellbeing. Cathy was encouraging, funny, smart, and focused.   She had a unique honest glow that was easily felt by everyone.  She only spoke uplifting, kind words. "After Cathy had passed away, her husband and I drove to Cathy's office to pick up her personal belongings from her desk.  We were still in auto-pilot trying to process the day's events and were emotionless as we walked into the SFE Nutrition office.  When we met her coworkers, it was as if Cathy has worked there her entire life and the nutrition team was as distraught as we were even though they had known her for less than to months." - Christie Pinto

Taco the Cat

Chris and Cathy adopted a cat named Taco from the Grand Prairie Animal Shelter in Texas. On Taco’s first birthday, she spelled out his name and the number “1” with 27 cat treats as his present.

Road Trip

Cathy and Chris were on a mission to visit all 50 states together. They were able to visit 31 states during their many road trips, that was tragically cut short.

60 guests were present while Chris and Cathy shared vows to each other at their wedding on August 9th, 2018.
